What is the most famous traditional French dessert??? I am sure, 80% of you would say: the CRÈME BRÛLEE! (I would say that too!)
You may not believe that but it’s not my favorite (because of the milk), but recently I have been cooking new versions of it: lavender or rosemary honey and… do you know what? I really like it!
So, if you have not tried yet, I think you have to ;)

Creme brulée rosemary honey

Ingredients (serves 6):
180ml heavy cream
180ml milk
4 egg yolks
1/2 vanilla pod
35g sugar
40g honey
1 rosemary blade

Pre-heat the oven at 100º
MIX1: Pour the milk, cream and vanilla pod in a sauce pan and bring to a boil. When it’s boiling, remove from the heat and add the honey. Let it cool down.
MIX2: In a jar, beat the eggs yolk and sugar.
When the MIX1 is at room temperature, take the vanilla pod out and add MIX1 to MIX2.
Pour the preparation in individual containers. Place them in a hot water bath in a roast pan and bake them during 1h30 at 100º.

Just before serving, dust brown sugar on it and caramelize it with a kitchen blowtorch
