FINANCIERS

Hi,
I hope your week is going well! Here we are good: we are snowed under pastry. I know some of you will be jealous but no worries, the recipes will come soon. What a sacrifice that I have to make for this blog, isn’t it?! ;)
Today, I am posting about a traditional French mignardise (I know….which one is not): the FINANCIERS, with a soft and springy texture that tastes of caramelized butter and almonds.

FINANCIER SWEET GOLD

 

 

INGREDIENTS (for 80 mignardises):

120g flour
300g butter
190g almond meal
300g icing sugar
300g white eggs
60g honey

INSTRUCTIONS:

The best would be to prepare the dough and set it aside during one night in the fridge.

1. Place the butter in a small saucepan over medium heat. Once the butter has melted let it come to a boil, swirling the pan occasionally. As it boils you will notice that a foam will appear on the butter’s surface. Continue to cook the butter until it looks clear and the milk solids have dropped to the bottom of the pan and have turned golden brown. Remove from heat and immediately pour through a strainer. Let cool to room temperature.
2. Sift flour, almond meal and icing sugar in a large bowl
3. Add the white eggs and mix gently with a spatula
4. Add finally the brown butter and the honey.
5. Set aside the dough during one night in the fridge.

The following day:
6. Pre-heat the oven at 190º C.
7. Fill each mold almost to the rim and sprinkle then with sliced almonds and icing sugar
8. Bake for about 8 minutes
