They are the perfect accompaniment to your afternoon tea! With their shell shape on one side, you’ve recognized them: the MADELEINES!
Today I am sharing an orange blossom water version. Since I have tried it, I never came back to the traditional recipe. I really like this subtle flavor!

One more secret: do you know how I like to eat them? With a mousse au chocolat!!
That said…. now let’s see the recipe and enjoy them!






3 eggs
150g sugar
200g flour
8g baking soda
100g melted butter
50g milk
2 table spoons orange blossom water


1. In a small saucepan, melt the butter and then keep it warm.
2. In the bowl of an electric mixer, mix the sugar and eggs until the mixture is thick and pale in color.
3. Add the orange blossom water and 40g milk.
5. Then add the flour and mix.
6. Add the baking soda, butter and the rest of the milk.
7. Set aside the dough for 15 minutes.
8. Pre-heat the oven at 190º C
9. Drop the dough in a piping bag and fill the Madeleine molds. Don’t fill them until the top, there are going to swell.

10. Bake for 6 minutes at 190ºC. Enjoy!! and let me know how you liked this orange blossom water version!
